Temple knight is better. Priest has extra points in magic and luck, which have no benefit for pure STR at all. If you start as a temple knight, you will have an additional 4 points in DEX (for 12 total) which allows you to use a CLB+10 and do respectable ranged damage in PvE.You can get 50 VIT, 40 END, 50 STR, and the requirements for SC and CW ...Dual wielding two uchigatanas actually makes for faster attacks if you alternate left and right. I'd really only recommend Tearing if you are just going to breeze through quickly and not focus on high levels due to Tearing being easier to access. I normally just use a Tearing+5 weapon until Sharp+5 is achieved.

For the minimum stats required to wield the Uchigatana, Basic+10 gets you approximately 233 total attack, versus 195 total attack for Sharp+5. Sharp+5 starts to outdamage Basic+10 at 26 Dex (264 vs. 260). At 40 Dex, Sharp+5 gets 309 total attack, while Basic+10 gets 286.
